½ cup brown sugar
1 cinnamon stick (3-4 inches)
4-5 whole cloves
3-4 allspice berries
½ teaspoon black peppercorns
1 star anise (optional)
¼ teaspoon red pepper flakes (optional, for subtle heat)
2 bay leaves
1 tablespoon fresh ginger slices (optional)
2-3 strips fresh lemon or orange zest
Optional Flavor Additions:
1 vanilla bean, split and scraped
½ teaspoon ground nutmeg
1 tablespoon honey
