Step 1: Prepare your tools and ingredients
Before starting, make sure you have all your ingredients ready. Separate the eggs carefully, because any yolk mixed with the whites will prevent the whites from becoming fluffy. Preheat your oven to 160 degrees Celsius (about 320 degrees Fahrenheit). Line a round cake pan with parchment paper. Lightly grease the sides so the cake can rise easily.
Step 2: Mix the yolk batter
In a large bowl, whisk the egg yolks with half of the sugar (about 60 grams) until the mixture becomes pale and slightly thick. Add the milk, oil, and vanilla extract, and mix well until everything is smooth. Sift the flour into the mixture and gently stir it until you get a soft, creamy batter. Do not overmix; just mix until there are no lumps.
Step 3: Whip the egg whites
In another clean bowl, use a hand mixer to beat the egg whites. Start at low speed until they become foamy. Then slowly add the rest of the sugar (60 grams) while mixing. Keep beating until the whites form stiff peaks. This means when you lift the whisk, the peaks should stand up straight without falling. This step gives the cake its cloud-like texture.
Step 4: Combine the mixtures
Gently fold one third of the whipped egg whites into the yolk batter using a spatula. Mix slowly from bottom to top so that the air bubbles remain in the mixture. Then add the remaining egg whites in two more parts, folding each time carefully until everything is blended evenly. Be patient and gentle because this step helps the cake stay soft and airy.
Step 5: Bake the cake
Pour the batter into your prepared cake pan. Tap the pan lightly on the counter to remove any large air bubbles. Place the pan in the oven and bake for about 35 to 40 minutes. The top should become light golden and spring back when touched gently. Do not open the oven door too early because the cake may sink.
Step 6: Cool the cake
Once baked, remove the cake from the oven and let it cool inside the pan for 10 minutes. Then carefully take it out and place it on a wire rack. Let it cool completely before adding any cream or topping. The cake will be soft, so handle it gently to keep its shape.
Step 7: Make the whipped cream
In a chilled bowl, pour the cold heavy cream. Add powdered sugar and vanilla extract. Beat the cream until it becomes thick and forms soft peaks. Do not overbeat, or it will turn into butter. Once ready, you can use it to cover the cake or serve it on the side.
Step 8: Assemble and decorate
Spread the whipped cream evenly on top of the cooled cake. Add your favorite toppings such as sliced strawberries, blueberries, or mint leaves. You can also sprinkle a light layer of powdered sugar or drizzle some honey for extra flavor. Your beautiful cloud cake is now ready to serve.
