Classic Glazed Banana Bread

  • Step by Step Method

    Step 1: Prepare the Bananas

Start by peeling the bananas and placing them in a medium bowl. Use a fork or potato masher to mash them until smooth. A few small chunks are fine because they add texture. The bananas should be very ripe with brown spots on the skin. This is when they are the sweetest and perfect for banana bread.

Step 2: Mix the Dry Ingredients

In another bowl, combine the flour, baking soda, baking powder, salt, and cinnamon. Mix everything with a whisk to make sure it is evenly blended. This step helps the bread rise properly and gives it a fluffy texture. Set the bowl aside.

Step 3: Cream the Butter and Sugar

Take a large mixing bowl and beat the butter with the sugar using an electric mixer or a hand whisk. Beat until the mixture becomes light and fluffy. This helps to trap air inside the batter, which makes the bread soft. It should take about two to three minutes of mixing.

Step 4: Add the Eggs and Vanilla

Crack the eggs into the butter mixture one at a time. Beat well after each addition. Then pour in the vanilla extract and mix again. The batter will become smooth and creamy at this stage.

Step 5: Add the Mashed Bananas

Now add the mashed bananas to the wet mixture. Stir slowly until everything is combined. You do not need to overmix because that can make the bread dense.

Step 6: Combine Dry and Wet Mixtures

Add the dry ingredients to the wet mixture in two parts, alternating with the yogurt or sour cream. Stir gently with a spatula or wooden spoon until just combined. The batter should be thick and smooth, with a rich banana aroma filling the air.

Step 7: Pour into Baking Pan

Grease a loaf pan lightly with butter or line it with parchment paper. Pour the batter into the pan and spread it evenly with a spatula. Tap the pan on the counter a few times to remove any air bubbles.

    Step 8: Bake the Bread

Preheat your oven to 350°F (175°C). Place the loaf pan in the center of the oven and bake for 55 to 65 minutes. You will know it is ready when a toothpick inserted in the middle comes out clean or with a few moist crumbs. The top should be golden brown and your kitchen will smell heavenly.

    Step 9: Cool Before Glazing

Once baked, remove the bread from the oven and let it rest in the pan for about 10 minutes. Then carefully transfer it to a wire rack to cool completely. Do not glaze it while hot or the glaze will melt away.

    Step 10: Prepare the Glaze

In a small bowl, mix the powdered sugar, milk, and vanilla extract. Stir until smooth and glossy. If it is too thick, add a little more milk one teaspoon at a time until you get a pourable consistency.

    Step 11: Glaze the Bread

Drizzle the glaze over the cooled banana bread using a spoon or small whisk. Let it sit for a few minutes until the glaze sets and forms a light, shiny coating on top.

    Step 12: Slice and Serve

Once the glaze has hardened, slice the bread with a sharp knife. Serve with coffee, tea, or a glass of milk. Enjoy every bite of this soft, moist, and perfectly sweet classic glazed banana bread.
